250gbrown rice medley microwave pouch
6falafel balls
50gbaby spinach leaves
1small cucumber, sliced
75ggrape (baby roma/plum) tomatoes
400gcanned chickpeas
35gcrumbled feta
30gfinely sliced red onion
45gpitted kalamata olives
4tbspbeetroot (beet) hummus (or substitute with regular hummus)
Lemon wedges and olive oil, to serve
Instructions
Heat the brown rice medley and falafel balls as per the packet instructions.
