An incredibly easy and tasty light meal, this Tuna Fried Rice is popular with kids. If they don't like tuna, you can easily swap it out for cooked bacon strips or bits.

Ingredients
1tbspolive oil
135gfrozen vegetables
2garlic cloves, freshly minced
370gcooked rice (jasmine, basmati, short-grain or even brown rice)
185gcanned tuna
4eggs, whisked
2tbsptamari, or all-purpose soy sauce
1tbspsesame oil
Instructions
Heat the olive oil in a large, heavy-based frying pan over medium heat.
Add the frozen vegetables and cook for 1 minute.
Add the garlic and cook for an additional minute, stirring it through the vegetables.
Add the rice and tuna and cook for 1 minute, stirring everything to combine.
Move everything to one side of the pan. Add the egg to the other side and cook for 2–3 minutes until firm. When cooked, combine it with the rice mixture.
Add the tamari and sesame oil, cook for 1 minute, then serve.

MAKE AHEAD
Refrigerate for up to 2 days or freeze for up to 2 months. Thaw completely overnight in the fridge. Reheat in the microwave.
