Ingredients
- 1 tbsp olive oil
- 1 cup frozen vegetables
- 2 garlic cloves, freshly minced
- 2 cups cooked white rice (jasmine, basmati, brown rice, short grain)
- 185 g canned tuna (1 can)
- 4 eggs, whisked
- 2 tbsp tamari (or all-purpose soy sauce)
- 1 tbsp sesame oil
Instructions
- Heat the olive oil on medium heat in a large skillet.
- Add the frozen vegetables, and cook for 1 minute.
- Add the garlic, and cook for an additional minute.
- Add rice and tuna, and cook for 1 minute.
- Move everything to one side of the pan. Add the eggs to the other side and cook for 2-3 minutes until firm. Fold through the rice.
- Add the tamari and sesame oil, cook for 1 minute and serve.
