Ingredients

Units Scale
  • 1 tbsp olive oil
  • 1 cup frozen vegetables
  • 2 garlic cloves, freshly minced
  • 2 cups cooked white rice (jasmine, basmati, brown rice, short grain)
  • 185 g canned tuna (1 can)
  • 4 eggs, whisked
  • 2 tbsp tamari (or all-purpose soy sauce)
  • 1 tbsp sesame oil

Instructions

  1. Heat the olive oil on medium heat in a large skillet.
  2. Add the frozen vegetables, and cook for 1 minute.
  3. Add the garlic, and cook for an additional minute.
  4. Add rice and tuna, and cook for 1 minute.
  5. Move everything to one side of the pan. Add the eggs to the other side and cook for 2-3 minutes until firm. Fold through the rice.
  6. Add the tamari and sesame oil, cook for 1 minute and serve.

MAKE AHEAD

Refrigerate for up to 2 days or freeze for up to 2 months. Thaw completely overnight in the fridge. Reheat in the microwave.
