Tuna Fried Rice

Looking for a quick and easy meal that your kids will love? Look no further than this delicious tuna fried rice recipe! Not only is it budget-friendly and easy to make, but it also makes use of pantry staples and frozen vegetables. And if your kids aren’t fans of tuna, you can easily switch it out for cooked bacon to create a more traditional fried rice dish.

Ingredients

  • 1 tbsp olive oil
  • 1 cup frozen vegetables
  • 2 garlic cloves, freshly minced
  • 2 cups cooked white rice (jasmine, basmati, brown rice, short grain)
  • 185g tin tuna
  • 4 eggs whisked
  • 2 tbsp tamari (or all-purpose soy sauce)
  • 1 tbsp sesame oilc

Instructions

  1. Heat 1 tbsp olive oil on medium heat in a large skillet.
  2. Add the frozen vegetables, and cook for 1 minute.
  3. Add the garlic, and cook for an additional minute.
  4. Add rice and tuna, and cook for 1 minute.
  5. Move to one side of the pan, add eggs and cook for 2-3 minutes until firm. Fold through the rice.
  6. Add the tamari and sesame oil, cook for 1 minute and serve.

Notes

MAKE AHEAD AND LEFTOVERS – Refrigerate for up to 2 days. Freeze for up to 2 months. Thaw completely overnight in the fridge. Reheat in the microwave.
