Ingredients

- 1 tbsp olive oil
- 1 cup (135 g) frozen vegetables
- 2 garlic cloves, freshly minced
- 2 cups (370 g) cooked rice (jasmine, basmati, short-grain or even brown rice)
- 185 g (61/2 oz) canned tuna
- 4 eggs, whisked
- 2 tbsp tamari (or all-purpose soy sauce)
- 1 tbsp sesame oil
Instructions
- Heat the olive oil in a large, heavy-based frying pan over medium heat.
- Add the frozen vegetables and cook for 1 minute.
- Add the garlic and cook for an additional minute, stirring it through the vegetables.
- Add the rice and tuna and cook for 1 minute, stirring everything to combine.
- Move everything to one side of the pan. Add the egg to the other side and cook for 2–3 minutes until firm. When cooked, combine it with the rice mixture.
- Add the tamari and sesame oil, cook for 1 minute, then serve.
Notes
MAKE AHEAD
Refrigerate for up to 2 days or freeze for up to 2 months. Thaw completely overnight in the fridge. Reheat in the microwave.
