Loaded Potato Taco Bowl

I double the beef mix every time I make this — not because I’m super organised, but because future me is always desperate for a shortcut.

Crispy roasted potatoes instead of taco shells keep things interesting, and the toppings are flexible enough that no one complains (for once). It’s dinner now, and dinner again next week with zero extra effort.

This is how I entertain without losing my mind. 😂 Everything – and I mean everything – was prepped the day before. The lamb kofta, silky smooth hummus, fattoush with oven-baked pita crisps, tabbouleh, spinach and cheese triangles… even the amazing @donna.hay cake.

Come the day, I swanned around with a wine, was able to actually speak to people, 😂 baked the kofta, assembled the salads and served everything buffet-style. It took under 30 minutes to pull together, it was delicious and I think it looked beautiful too – aside from the unusually enormous kofta situation. 😆🤷🏻‍♀️

Slow-cooker Massaman Beef Curry

Dinner that basically cooks itself, makes your house smell amazing, and tastes even better the next day. Yes please. 🙋🏻‍♀️

This one’s for the nights when you’re tired, out of ideas, and just want a guaranteed win. Fall-apart beef, soft potatoes, and a coconutty broth that’s mild, family-friendly and full of flavour. It’s not trying to be restaurant-style curry – it’s a real-life, real-delicious weeknight hero.

I’ve added a few flavour boosters and tips for thickening the sauce if you want to dial it up. It’s the ultimate set and forget with the added bonus of leftovers freezing brilliantly.

Deconstructed Wonton Soup

If your family loves dumplings but you don’t love folding them on a Tuesday night… this is your answer! This one-pot soup has all the dumpling flavour, none of the wrapping stress. You just roll the filling into quick little meatballs, drop them straight into the broth, and toss in some greens and torn wonton wrappers. That’s it. It’s cosy, comforting, takes 20 minutes, and tastes like something you’d order out – minus the delivery fee.

Originally inspired by @eat_figs_not_pigs who created a meat-free version, this has become one of our favourite dinners.

We finish ours with chilli oil and spring onions – it’s so good!
