My kind of weeknight dinner. Stuffed Pita (Arayes). By the end of last year, I felt like I was running on a hamster wheel – and it won’t surprise anyone that I’m not great at running. 😂 This is the ultimate simple, family-friendly weeknight dinner for those nights when you don’t have much left in the tank. Juicy, crispy, street-foody vibes, but made at home in well under 20 minutes (and well under $5 per serve).

When I see these on the meal plan, I feel instantly relieved. 😂 Baked chicken rissoles – or as my kids call them, giant nuggets… except these are about ten times easier and faster to make.

This is the dinner I know everyone will eat, and it’s not going to destroy my soul in the process. 🫠 The bowl and the crumb might trigger your “absolutely not on a weeknight” instincts, but I promise this is manageable. Gloves on, minimal handling, everything straight into the dishwasher and the oven – done.

I love serving them with mashed potatoes (and no, I did not make them fresh! I keep a big batch in the freezer) and some cucumbers. Juicy, crispy, oven-baked, and surprisingly hands-off. Exactly what I need on a weeknight!

Valentine’s Day Brownies

We don’t buy gifts for Valentine’s Day. We make brownies. They’ve become a bit of a tradition.

I don’t bake often – mostly because I’m short on time and I can’t deal with another thing on my list. 🫠But these brownies make it easy. No fancy equipment. Over-mix a little? Fine. A few extra minutes in the oven? Still great.

I make them extra cute with love-heart sprinkles, but the real magic happens in the middle – never cakey, always fudgy – with a glossy chocolate ganache on top. And if I don’t want my kids eating an entire tray in a day, the leftovers go straight into the freezer.
