My #1 most viral recipe: Juicy Oven-baked Beef Kebabs. These are everything I want on a night when I can’t be bothered standing over the stove… which is most nights. 😂 I love how much you loved these. No skewers, no splatter, just juicy spiced beef or lamb cooked in the oven and served with garlic yoghurt, sumac onions and flatbread. Everyone builds their own which makes it feel a little bit fancy, even if dinner was mostly just “mix, flatten, bake”. It’s a great recipe for a crowd or those nights where dinner feels like too much. You can make it ahead, freeze it, swap in chicken mince, or cook it on the barbecue if the weather’s nice!

KEBABS
1 kg (2¼ lb) minced (ground) beef or lamb (15–20% fat for best flavour and juiciness, see note 1 re chicken in full recipe)
1 small brown onion, grated using a box grater
1 tbsp freshly minced garlic
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp sweet paprika
1 tsp chilli flakes (optional)
2 tsp sea salt flakes
¼ tsp freshly cracked black pepper
3 tbsp finely chopped flat-leaf parsley (can be substituted with coriander/cilantro)
½ tsp bicarbonate of soda (baking soda)
2 tbsp olive oil, for brushing (see note 2)

My word for 2025 was balance — and I’d be lying if I said I found it 😂 Maybe some days more than others.

This year marks 5 years of Simple Home Edit, and it’s impossible to separate it from who I am now. It’s a part of me in the best possible way. It pushes (sometimes shoves 😅) me out of my comfort zone and gives me something I truly love doing.

It’s bigger than recipes. It’s about food that fits into busy days, tired evenings, and full houses.

As 2025 comes to a close (because let’s face it, I’ll be asleep as soon as the family fireworks finish 😂), I want to say thank you… and I really mean it. Thank you. There truly isn’t a day that goes by that I don’t feel grateful for the trust, the support, and the kindness you share with me. Heading into 2026 feeling excited… and quietly terrified. 😆 In the best way. There are some really exciting things coming. ❤️🥹

My #2 most viral recipe: Tuna Avocado Crispy Rice Salad. It’s made using the pantry staple I always have — canned tuna… and everyone knows avocado and cucumber make anything a complete meal. 😂😅 This salad is budget-friendly, it’s made with simple ingredients and it features crispy rice which makes it feel extra special without a whole lot of effort. It’s also easily customisable (plain rice and no chilli for the kids!).

CRISPY RICE
3 cups (555 g) cooked jasmine or sushi rice, cooled (or 450 g/1 lb packet microwave rice)
2 tbsp tamari or all-purpose soy sauce
1 tsp dark soy sauce (optional, for colour)
2 tbsp sesame oil
2 tbsp olive oil

DRESSING
½ cup (125 g) whole-egg mayonnaise
3 tbsp tamari or all-purpose soy sauce
2 tbsp rice wine vinegar
2 tbsp sesame oil
1 tbsp honey
1 tbsp sriracha (optional)

My #3 most viral recipe: One-pan Chicken and Broccoli Lasagne. Quite possibly the dish I’ve made more than any other pasta this year. It’s rich and cheesy, packed with shredded chicken and broccoli, and all cooked in one pan on the stove – no bechamel, no layering, no boiling lasagne sheets… basically this tired Mum’s dream. 😂

The lasagne sheets cook directly in the sauce, soak up all that creamy garlic flavour, and then it gets finished under the grill with a golden, melty mozzarella top. CHICKEN
2 tbsp olive oil
300 g (10½ oz) (1 large) boneless, skinless chicken breast, sliced horizontally into thinner steaks
½ tsp sea salt flakes
¼ tsp freshly cracked black pepper
¼ cup (60 ml) water

CHICKEN AND BROCCOLI LASAGNE
2 tbsp unsalted butter
1 small brown onion, diced
1 tbsp freshly minced garlic
1 leek, white part only, finely sliced
3 tbsp (30 g) plain (all-purpose) flour
2½ cups (625 ml) chicken stock (or use 1 chicken stock/bouillon cubes and 2½ cups/625 ml water)
1½ cups (375 ml) thickened (heavy) cream
1 tbsp Italian mixed herbs (Italian seasoning – can be substituted with dried oregano or thyme)
1½ cups (90 g) broccoli florets, roughly chopped into 1 cm (½ inch) pieces
1 tsp sea salt flakes (see note 1)
¼ tsp freshly cracked black pepper
250 g (9 oz) fresh lasagne sheets, cut into 10 cm (4 inch) squares (see note 2 if you want to use dried lasagne)
½ cup (50 g) freshly grated parmesan
1 cup (150 g) freshly grated mozzarella

Fresh oregano or basil leaves, to serve (optional)
