I like to dedicate a little time on my days off to get ahead for the week. It doesn’t have to be a big, perfectly organised meal prep session – sometimes it’s just chopping a few vegetables, marinating some protein or cooking something simple that will make dinner easier later on. I find even a small amount of prep can take a lot of pressure off busy weeknights and help us cook the kind of meals we actually want to be eating.
The beauty of Get Ahead Sunday is that there are no rules. Some weeks I have a couple of hours to spend in the kitchen, and other weeks it’s just a quick 20-minute reset of the fridge. It might look like roasting a tray of veggies, prepping lunchbox snacks, cooking a freezer-friendly dinner, or making something that can be reheated during the week.
This week I had about 1½ hours to get ahead and focused on a few easy recipes that will make dinners and lunches much simpler. I prepped Cheat’s Moussaka with the most delicious protein-packed yoghurt topping, made a batch of chicken meatballs ready to freeze and bake later, and stocked the freezer with Chicken Schnitzels — an absolute go-to in our house. I also prepped some veggies so they’re ready to grab for snacks and lunchboxes during the week.
Just a little prep now makes the week ahead feel calmer, easier and a lot more manageable.
