If there’s one thing that’s helped me survive those chaotic weeknights, it’s meal prepping on Sundays. It is not the easiest thing to do when I would rather be relaxing, but a couple of hours in the kitchen on Sunday saves me a ton of stress during the week. When the kids are asking, “What’s for dinner?” and I’ve been running around all day, it’s a relief to know I’ve got something ready to go.
This week, I’m prepping three of my go-to meals: Freezer-Friendly Chicken Schnitzel, Hainanese Chicken, and Quick Beef and Broccoli Noodles. These recipes have become lifesavers in my house because they’re not just delicious—they’re also versatile. I can freeze them, reheat them, or even whip them up fresh when I have a little extra time.
