Pork with Garlic Rice

Ingredients

Pork

  • 1 tbsp olive oil
  • 1 tbsp garlic. freshly minced 
  • 1 tbsp ginger, freshly minced
  • 500 g (1 lb) pork mince/ground pork
  • ¼ (59 ml) cup rice wine vinegar
  • ¼ cup tamari (59 ml) (or all-purpose soy sauce)
  • ¼ cup (50 g) brown sugar

Rice

  • 1 tbsp olive oil
  • 1 tsp garlic, freshly minced
  • ½ cup (67 g) frozen peas
  • ½ cup (67 g) frozen corn
  • 2 cups (370 g)cooked rice (see note 1)
  • 1 spring onion/scallion, sliced
  • 1 tbsp tamari (or all-purpose soy sauce)
  • 1 tbsp sesame oil

To serve

  • 4 fried eggs (see note 2)
  • 2 cucumbers, cut into chunks
  • 2 tomatoes, cut into wedges
  • ½ bunch of coriander/cilantro, leaves picked
  • 2 tbsp fried shallots
  • 2 tbsp chilli in oil, to serve (optional)

Instructions

Pork

  1. Heat the oil in a large skillet on high heat.
  2. Add the garlic and ginger. Cook, stirring for 30 seconds.
  3. Add the pork mince and cook for 2-3 minutes until browned.
  4. Add the rice wine vinegar, tamari and brown sugar. Stir to coat pork, then cook for 5 minutes. Do not stir during this time; this will allow the sauce to caramelise.
  5. Remove from heat and set aside while you prepare the rice.

Rice

  1. Heat the olive oil on high heat. Add the garlic and cook for 30 seconds until fragrant.
  2. Add the peas and corn, and cook until defrosted, 1-2 minutes.
  3. Add rice, and cook for 1 minute until heated through.
  4. Remove from the heat, and add spring onion, tamari and sesame oil. Stir through to coat.

To serve

  1. Serve rice piled with pork and a fried egg on top. Serve cucumbers, tomatoes and coriander on the side. Sprinkle with fried shallots and chilli in oil if using.

Notes

Note 1 – Day-old rice works beautifully in this recipe. If you are using freshly cooked rice, follow the above recipe but add the rice last to stop it from overcooking.

 

Note 2 – Cook the perfect fried egg using medium-low heat and place the lid on your pan in the last 2 minutes of cooking. It helps the top cook through!

MAKE AHEAD

Pork with Garlic rice can be refrigerated for up to 2 days. Reheat in the microwave. Not suitable to freeze.
