Beef Burrito Bowl

My fresh and colourful beef burrito bowls are quick and easy to prepare, made with beef mince and a few simple spices that come together to make a delicious, saucy, spicy Mexican favourite. This recipe will satisfy your craving for Mexican, but you won’t slip into a food coma with this lighter take on the classic beef burrito. Pile up your bowl with all your favourite toppings for extra flavour, texture and crunch.

Ingredients

  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 500g regular beef mince
  • 2 tbsp tomato paste
  • Your favourite Mexican toppings to serve (cooked rice, grated cheese, jalapenos, red cabbage, black beans, corn, lime wedges, sour cream, avocado)

Instructions

  1. Combine the paprika, cumin, onion powder, oregano and salt in a small bowl.
  2. Heat a large skillet on high heat, and add the olive oil and onion. Cook, stirring for 1-2 minutes.
  3. Add the beef mince, and cook for 3-4 minutes until browned.
  4. Add the combined spice mix, the tomato paste and 1/3 cup of water. Cook, stirring for 2-3 minutes.
  5. Serve with your favourite Mexican toppings.

Notes

MAKE AHEAD – Refrigerate for up to 3 days. Freeze in an airtight container for up to 2 months. Thaw completely in the fridge before reheating. Reheat on the stove or in the microwave. Freeze in small portions or individual portions for ease of reheating.

LEFTOVERS – Refrigerate for up to 3 days. Freeze in an airtight container for up to 2 months. Thaw completely in the fridge before reheating. Reheat on the stove or in the microwave.
