Crispy Fish Tacos

Crispy tacos do not need to be reserved for dinners out. They can be enjoyed in the comfort of your home. Think crispy fish tucked into soft tortillas and topped with all your favourite Mexican sides. Jalepinos and spicy mayo always make an appearance on mine!
Ingredients

Fish tacos

  • 600g flathead fillets cut into strips (another great option is ling)
  • 1/2 cup plain flour
  • 3 eggs whisked
  • 3 cups panko bread crumbs
  • Oil for frying (any high smoke point oil, I used Canola)
  • 1 tsp salt to season

To serve

  • 10 soft tacos
  • 1/4 red cabbage, shredded
  • 4 tbsp sour cream
  • Corn salad (2 cups charred corn or steamed corn, 2 tbsp chopped coriander, 1 tbsp lime juice and 1/2 tsp sweet paprika)
  • Guacamole (2 avocados mashed with 2 tbsp chopped coriander, 2 tbsp lime juice, 1/2 tsp salt and 100g cherry tomatoes)
  • Spicy sauce (equal parts mayonnaise and sriracha)
  • Jalepinos
  • Extra lime wedges
Method
  1. One by one, dust the fish fillets with flour. Follow by dipping the fish into the egg mixture and then pressing it into the breadcrumbs so that the fish is evenly coated (note 2).
  2. Heat the oil on medium-high heat in a deep skillet. Cook the fish for 8-10 minutes turning regularly until it is crispy and golden.
  3. Once the fish is cooked, place it on paper towel to absorb excess oil and sprinkle with salt.
  4. Serve arranged on shredded cabbage with desired sides.

Can I freeze crumbed fish? Yes! Follow step 1 of the recipe and then place the fish in an airtight container with baking paper separating the layers to stop them sticking. Freeze for up to 2 months. Defrost in the fridge overnight if shallow frying or see the directions below on how to bake from frozen.

Can fish tacos be baked in the oven instead of deep fried? Yes! See the instructions below.

How to oven bake fish

  1. Preheat oven to 220c convection or 200c fan forced.
  2. Spray crumbed fish with olive oil, cook 12-14 minutes.
  3. If you want to deepen the colour of the crumb, grill for the final 2 mins of the cook.

How to oven bake fish from frozen

  1. Preheat oven to 200c convection or 180c fan forced.
  2. Spray crumbed fish with olive oil, cook 17-19 minutes.
  3. If you want to deepen the colour of the crumb, grill for the final 2 mins of the cook.

Note 1 – I use Canola oil for deep frying. You will need enough oil to create a depth of at least 2-3cm in your frying pan to ensure your fish cooks evenly.

Note 2 – Use baking paper under your flour and breadcrumbs. It makes clean up a breeze!
