Toasted bagels are topped with store-bought smoked salmon, a roasted capsicum (bell pepper) and onion dip, cucumber, capers, pickled red onions and dill to create a cafe-style treat in just 15 minutes.

- 4 bagels, toasted
- 125 g (½ cup) Nuffin roasted capsicum and onion dip (or spreadable cream cheese)
- 2 small cucumbers, sliced thinly
- 200 g (7 oz) smoked salmon
- 1 tbsp baby capers
- 2 tbsp Quick Pickled Red Onions or regular sliced red onions
- 1 tbsp fresh dill
Instructions
- Assemble – Top the bagels with roasted capsicum and onion dip (or cream cheese if using), cucumber, smoked salmon, baby capers, pickled red onions and fresh dill.
