Southern Fried Chicken

- 1 tbsp paprika
- 1 tbsp onion powder
- 1 tsp garlic powder
- 1 tsp sea salt flakes, plus extra to serve
- 4 boneless, skinless chicken thighs, visible fat trimmed
- 250 ml (1 cup) buttermilk
- 300 g (2 cups) plain (all-purpose) flour
- Oil, for frying (see note 1)
Instructions
- Season the chicken – In a small bowl, combine the spices and salt. Sprinkle the mixture over both sides of the chicken.
- Coat the chicken – Dredge the chicken in the buttermilk, followed immediately by the flour. Shake off any excess.
- Heat the oil – In a large, deep pan, heat the oil over medium heat.
- Cook – Cook the chicken for 8–12 minutes or until crisp and golden.
- Drain – Drain on a paper towel.
- Serve – Sprinkle with extra salt to serve.

Hi Steph! Yes, I have 😊 It does work in the air fryer – just spray it very generously with olive oil spray to help the coating crisp up. Cook at 200°C (400°F), turning halfway through, until golden and cooked through. It won’t be quite as crispy as deep-fried, and the coating can come off a little more easily, but it’s still really delicious and a great lighter option! Nic x
