Ingredients

  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt plus extra to serve
  • 4 chicken thigh fillets, fat trimmed
  • 1 cup buttermilk
  • 2 cups flour
  • Oil for frying

Instructions

  1. In a small bowl, combine the spices and salt, and sprinkle over both sides of the chicken.
  2. Dredge the chicken in the buttermilk, followed immediately by the flour. Shake off any excess.
  3. In a large, deep pan, heat the oil on medium heat.
  4. Cook the chicken for 8-12 minutes or until crisp and golden.
  5. Drain on a paper towel.
  6. Sprinkle with extra salt to serve.

Notes

MAKE AHEAD AND LEFTOVERS – Best cooked and consumed immediately. Leftovers can be refrigerated for up to 2 days and reheated in the microwave or oven however the coating will soften.
