Cheat’s Caesar Salad Dressing

This is a salad dressing I love making to accompany a pizza or pasta night... It goes down equally well as a side to a BBQ when we are entertaining. I am always asked "what IS this?". It almost doesn't deserve the attention it gets with how simple it is to make! It's as easy as stirring a couple of ingredients together to create a creamy, smooth dressing reminiscent of a Caesar salad dressing. Add garlic croutons, crunchy bacon bits and anchovies to really make it sing as a dish on it's own.
  • 1/3 cup store bought whole egg mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 heaped tbsp freshly grated parmesan, plus extra to sprinkle on top (see note)
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp salt
  • 2-3 cups of lettuce leaves. Works best with cos lettuce (pictured), gem lettuce or oak leaf lettuce
  1. Combine dressing ingredients in a large bowl.
  2. Add washed lettuce leaves, toss to coat.
  3. Sprinkle with remaining parmesan to serve.

Note: Use only freshly grated parmesan for this. Ant-caking agents are used in many grated cheeses which gives them a different texture and taste. Freshly grated will melt into the dressing and taste absolutely delicious!
