Cheat’s Caesar Salad Dressing Recipe

This is a salad dressing I love making to accompany a pizza or pasta night. It goes down equally well as a side to a BBQ when we are entertaining. I am always asked, “what IS this?” It almost doesn’t deserve the attention it gets with how simple it is to make! It’s as easy as combining a few ingredients, and the result is a creamy, smooth dressing reminiscent of a Caesar salad dressing. I’ve kept this recipe simple, but you can add garlic croutons, crunchy bacon bits and anchovies to make it sing as a dish on its own.

Can you make Cheat’s Caesar Salad Dressing ahead of time?

Wash and dry lettuce. Store in an airtight container or reusable bag with a sheet of paper towel to absorb moisture. Keep for between 3-5 days.

Is Cheat’s Caesar Salad Dressing suitable for leftovers?

Once dressed, this salad is best served and eaten immediately.

Ingredients

  • ⅓ cup (80 g) store-bought whole egg mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 heaped tbsp Parmesan, freshly grated, plus extra to sprinkle on top
  • ½ tsp freshly cracked black pepper
  • ½ tsp salt
  • 23 cups (150 g) lettuce leaves such as cos/romaine lettuce (pictured), gem lettuce or oak leaf lettuce, washed

Instructions

  1. Combine all ingredients except lettuce in a large bowl.
  2. Add lettuce leaves and toss to coat.
  3. Sprinkle with extra Parmesan to serve.
