I found this viral recipe on Instagram and knew immediately I had to try it. Crispy little parcels of pastry stuffed with oozing, melty brie and sweet cranberry sauce is a match made in heaven – especially when these are so easy to prepare!
Store-bought puff pastry is cut into squares and then tucked into mini muffin pans before being piled high with cubes of brie, cranberry sauce, walnuts and a sprinkle of rosemary. These Cranberry Brie Bites look impressive, take very little preparation time and are the perfect moreish appetiser to get your party started!
Can brie cheese be frozen?
Yes! One of my greatest, long-standing hacks is buying brie or camembert cheese while it is on special and freezing it for up to 2 months. It needs to be thawed in the fridge overnight prior to use.

These gloriously festive, crazy-quick-to-make Cranberry Brie Bites are the perfect appetisers for any party or gathering. They are as impressive and delicious as they are easy!

- Yield: 6–8 (makes 16 bites) 1x
Ingredients
- Cooking oil spray
- 1 sheet puff pastry, thawed
- 200 g (7 oz) brie, cut into 16 cubes
- ⅓ cup (80 g) cranberry sauce
- 1 tablespoon roughly chopped walnuts
- 2 sprigs rosemary, leaves picked
Instructions
- Preheat the oven to 220°C (425°F) (200°C/400°F fan-forced). Spray a mini muffin pan with cooking oil spray.
- Cut the puff pastry into 16 squares (I did four by four rows).
- Press one square of the puff pastry into each of the muffin pan holes.
- Fill each puff pastry square with a cube of brie and roughly 1/2 teaspoon of cranberry sauce.
- Bake for 10–15 minutes or until the pastry is cooked through and golden.
- Remove the brie bites from the muffin pan and arrange them on a platter.
- Top each brie bite with a sprinkle of walnuts and a couple of rosemary leaves. Serve immediately.

MAKE AHEAD
Cranberry Brie Bites are best made and eaten immediately. I like to assemble them 30–60 minutes prior to guests arriving and refrigerate them until I’m ready to bake.
LEFTOVERS
Leftovers (if, miraculously, there are any!), at a push, can be refrigerated and either eaten cold or reheated in the oven to avoid waste, but are best enjoyed immediately, straight out of the oven.

Is there an alternative to the nut topping? Our daughter has a nut allergy and even though it was a small amount and she didn’t eat or touch them, she had a mild reaction to the oils when others ate them.
I’d love to make again but with an alternative if you can suggest one thank you 😉

Hi Nic! I can completely relate to this! We have a nut allergy at our place too. I make half with the nuts and half without and they are equally delicious! If you did want to add some crunch, you could also try some pepitas (pumpkin seeds), sunflower seeds or sesame seeds. I hope that helps, Nic x
