Easy Greek Chicken

If you are after the perfect dinner idea for a busy weeknight, this Easy Greek Chicken is not only ready and on the table in less than 15 minutes, it is flavour packed and made with ingredients you probably already have on hand in the pantry. Classic flavours of oregano, lemon juice and garlic come together to transform a simple dish into one you love.  Serve it with a fresh Greek Salad, a dollop of tzatziki and some flatbread to complete the dish.

Ingredients

  • 6 chicken thigh fillets, fat trimmed (can be substituted with chicken breast)
  • 1 tsp sweet paprika
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp garlic, freshly minced
  • 1/4 cup olive oil
  • Juice and zest of 1 lemon

Instructions

  1. Cover the chicken thighs with baking paper and pound them using a rolling pin or mallet to an even thickness.
  2. Combine the chicken thigh with the  marinade ingredients. Cook immediately or marinate up to 24 hours for a deeper flavour.
  3. Heat a large frying pan on medium-high heat. Cook the chicken for 8 minutes, turning once halfway.
  4. Add 2 tbsp of water to scrape up all of the crispy bits in the base of the pan and continue cooking for 2 minutes or until the chicken is cooked through.
  5. Serve with Greek Salad, flatbread and tzatziki.

Notes

MAKE AHEAD – Marinate the chicken, cover and refrigerate for up to 24 hours.

LEFTOVERS – Refrigerate for up to 3 days, reheat in the microwave. Not suitable to freeze.

  1. I’m not the greatest cook, I always stick to recipes. This was so easy to follow and was absolutely delicious. I went all out and made your Greek salad, tzatziki dip and flatbreads for our anniversary. I must have used every bowl and utensil in my kitchen and it probably took me about 2hrs to make (kids, chatting etc) but gosh it was worth it. My husband said it was the best thing I’ve ever cooked. It’s only took 11yrs for him to compliment my cooking! Hahaha.

  2. This was so, so easy and absolutely delicious, thank you so much! Will definitely be going into the rotation. My husband and I have always been a bit funny with chicken thigh, but since I’ve been following you I have gained so much more confidence cooking it – and it’s so, so much better! Rather than what can usually be dry old breast. Because I am slightly insane and have the fear of god instilled in me when it comes to pink chicken, I do cover the thigh with a bit of alfoil once I flip it, but it works well. Thanks again!

    1. Oh I can relate to this so much and used to be the same way! In my early 20’s I avoided chicken thigh at all costs. But now I can’t get enough! The great thing about it is that it is so forgiving to cook, so even if you cook it longer, it will still be juicy and delicious.
