Get Ahead Sunday #14

Some Sundays, I’m all over it … the chicken’s marinating, the veggies are roasted, and I’ve convinced myself I’ve basically nailed adulthood. Other weeks … well, I’m just thrilled if I manage to wash some grapes and shove a load of washing in before dinner. That’s the beauty of Get Ahead Sunday – it’s not about perfection or ticking boxes, it’s about doing something that makes the week ahead a little easier.

For me, getting ahead means I can start Monday with one less thing to think about. It’s not a rule or a ritual – it’s a sanity-saver. Sometimes it’s cooking a full dinner for the freezer, other times it’s just chopping a few veggies or marinating some chicken so Future Me doesn’t have to. It’s flexible, realistic, and changes every week depending on time, energy and what’s hiding in the fridge.

This week, I’m leaning into comforting, flavour-packed meals that make dinner (and even lunches) feel effortless. Think silky Hainanese Chicken Rice that keeps beautifully for leftovers, a simple Roasted Chicken and Veg that practically cooks itself, Mediterranean Roasted Vegetables that go with everything, and a rich, cosy Lamb Korma you’ll want to make on repeat. A little prep with these recipes goes a long way – and your future self will 100% thank you.

Hainanese Chicken Rice

This Hainanese Chicken Rice recipe is a much quicker and easier version of the beloved classic. Poached chicken and fragrant rice are cooked in chicken broth flavoured with spring onion (scallion) and ginger. It’s comforting, satisfying and refreshing and is totally family-friendly.

Mediterranean Chicken Tray Bake

This Mediterranean Chicken Tray Bake recipe is a stress-free way to cook a whole meal in one pan! Bone-in chicken thigh cutlets bake until golden in a gorgeous sauce flavoured with a handful of pantry staples, such as honey, mustard and lemon. Potatoes cook alongside and melt down into the flavoursome chicken juices.

Mediterranean Roasted Vegetables

A colourful tray of golden, caramelised Mediterranean Roasted Vegetables, baked to perfection with sweet blistered tomatoes. Beautiful on its own or as a side with grilled meats, roasts, barbecues, or tossed through salads and grains – this is one of those recipes that makes everything taste better.

Easy Lamb Korma

A beautifully mild, creamy and aromatic Easy Lamb Korma recipe that looks impressive but is incredibly simple to make. One pot, everyday spices, slow-cooked lamb shoulder and naturally sweet onions do all the work. It’s freezer-friendly, perfect for meal prep and even better the next day – a must-add to your weekly rotation.
