Meal Plan #62

Some weeks I’m organised, motivated and ready to cook. Other weeks I’m staring into the fridge at 5 pm hoping dinner will magically appear. If you’re in that season right now, this collection will carry you. These are the dinners I make when time is short, groceries are expensive, and I need meals that everyone will actually eat without complaints. Think juicy Baked Chicken Rissoles, crispy, golden Crispy Sweet Chilli Chicken, comforting Chicken and Leek Pot Pie, and the kind of low-effort, high-reward meals like Creamy Coconut Peanut Noodles and the Loaded Potato Big Mac Bowl that feel fun but are made with simple supermarket ingredients. There’s minimal prep, no complicated steps, and plenty of budget-friendly options that work for real life. This is your plan for the week – no overthinking required, just reliable, family-approved dinners that get you through the chaos.
