Passion Fruit Martini
Passion Fruit Martini is the ideal tropical and refreshing cocktail to serve at a summer event. I have provided non-alcoholic tips so the whole family can enjoy this beautiful drink.

Ingredients
- 2 passion fruit, halved
- 1/4 cup (60 ml) vodka or gin (see note 2 for non-alcoholic)
- 30 ml (1 fl oz) Passoã (see note 2 for non-alcoholic)
- 1 tbsp lime juice
- 1 tbsp sugar syrup (see note 1)
- 2 cups ice
- Prosecco, to serve (see note 2 for non-alcoholic)
Instructions
- Scoop the seeds from one of the passion fruit into a cocktail shaker, add the vodka or gin, Passoã, lime juice, sugar syrup and ice.
- Shake well, strain into two cocktail glasses, top with prosecco and serve with half a passion fruit in each glass.
Notes
Note 1 – To make a simple sugar syrup, combine equal parts sugar and water in a small saucepan. Heat over medium–high and, once simmering, stir the mixture for 2–3 minutes until the sugar has dissolved. Cool and refrigerate in an airtight container for up to 3 weeks.
Note 2 – Prefer to make these non-alcoholic? Substitute the vodka/gin and Passoã with extra passion fruit pulp and use sparkling passion fruit drink to top up instead of prosecco!
