Passion Fruit Martini

Ingredients

  • 2 passion fruit, halved
  • 60 ml vodka or gin
  • 30 ml passoa
  • 1 tbsp lime juice
  • 1 tbsp sugar syrup (see note 1)
  • 2 cups ice
  • Prosecco, to serve

Instructions

  1. Scoop the seeds from one of the passion fruit into a cocktail shaker, add the vodka or gin, passoa, lime juice, sugar syrup and ice.
  2. Shake well, strain into two cocktail glasses, top with prosecco and serve with half a passion fruit in each glass.

Notes

Note 1 – To make a simple sugar syrup, combine equal parts sugar and water in a small saucepan. Heat on medium-high, and once simmering, stir the mixture until the sugar has dissolved for 2-3 minutes. Cool and store in an airtight container, refrigerated for up to 3 weeks.

 

Prefer to make these non-alcoholic? Substitute the vodka/gin and passoa with extra passionfruit pulp and use sparkling passionfruit drink to top up instead of prosecco!
