Some weeks I prep a lot, some weeks I prep nothing at all – there are no rules, just whatever works! But when I do set aside a little time for meal prep, it makes the week ahead so much easier.

This week I spent about 1½ hours getting ahead and focused on a few simple recipes that will help with busy days. I prepped Creamy Rose Pasta ready for an easy family dinner, marinated Tandoori Chicken for a quick one-pan meal, and made some Chia and Oat Puddings for grab-and-go snacks. I also whipped up a batch of Homemade Granola for breakfasts and prepared some Homemade Nachos that can be used in burritos, bowls or loaded onto corn chips.

A little prep now means dinners (and snacks!) are sorted even on the busiest nights.
