One of my “self care” strategies is spending a little time on a Sunday doing some basic meal prep for this week’s meals. I might only spend an hour or two doing anything from chopping some veggies to preparing part of a meal – but, boy, it really takes the pressure off when it comes to crunch time at 5.30 on Tuesday!

My Get Ahead Sundays are never exactly the same … it all depends on what’s on the menu that week and where I think I can save time. I’m also always thinking about how I can cook once and feed my family twice, whether that’s making extra to freeze for another day, or prepping a meal that can be repurposed for lunches.

This week I rolled the patties for my Homemade Beef Cevapi for tomorrow night’s dinner, then to use in delicious lunchbox wraps with salad during the week. I prepped a double batch of the beef mixture for my Homemade Nachos … some for this week, some to freeze for another day (maybe nachos, maybe a taco bowl). While the beef was cooking, I trimmed up some chicken thighs for Easy Butter Chicken.

My Get Ahead Sundays have become a lifeline for me, making weeknights calmer and way more manageable.
