Today I’m bringing you another delicious takeaway recipe! My Peri-Peri Style Chicken Burgers put a spicy twist on the classic chicken burger. Juicy, marinated chicken breast fillets are the main focus of these burgers, and they can be marinated in advance to make this recipe even quicker on busy nights. Top a soft brioche roll with the chicken, crisp tangy coleslaw, cheese, and a drizzle of chilli mayo and you’ll find yourself in heaven–or adjust these toppings to suit your family’s preferences. These are great for entertaining or devouring as a fun family meal. 

Can you make Peri Peri Style Chicken Burgers ahead of time?

Marinate the chicken and refrigerate for up to three days before cooking. Freeze for up to 2 months. Thaw completely in the fridge overnight before cooking.

Ingredients

Scale
  • 2 chicken breasts, halved lengthways (to make 4 cutlets)
  • 4 brioche rolls
  • Coleslaw, to serve
  • 4 slices cheese
  • Chilli mayo, to serve (see note 1)

Marinade

  • 1 tbsp sweet paprika
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp olive oil

Instructions

  1. Place the chicken in a medium-sized bowl along with the marinade ingredients. Use your hands to coat.
  2. Heat a large skillet on medium heat and cook the chicken for 8-10 minutes. Turn once halfway through and add 1/4 cup of water to help loosen the crispy bits. Rest for 2-3 minutes before serving.
  3. Serve the brioche buns topped with coleslaw, cooked chicken, sliced cheese and chilli mayonnaise.

Notes

Note 1 – To make chilli mayo, mix together 1 part chilli oil,  2 parts whole egg mayonnaise and a squeeze of lemon or lime juice.
