Black Bean Burritos - a super quick and easy dinner perfect for midweek when energy levels are starting to drop! Using black beans, this dinner comes together quickly. The filling is freezer-friendly so there is no waste and it’s well under $5 per serve. Although washing the food processor on a weeknight does NOT excite me, 😂 this avocado dip is well worth the extra effort! I serve with sour cream or plain Greek yoghurt, if the “can’t be bothered” factor is high.

There’s nothing more I love than starting the day with a power clean. I set my timer for as long as I’ve got to spare and get into it. It’s amazing how much I can achieve in a short period of time when I just DO IT versus THINKING about having to do it. 😂 And it never takes as long as I think it will!

The products that I use matter. We have got allergy sufferers and pets which can be tough, because any kind of fragrance can disturb an allergy and cause a reaction. I’ve used the @ecostoreau Ultra Sensitive range for several years. Chicken Paprikash

A comforting, delicious version of a Hungarian-inspired chicken stew – chicken is slow-cooked in a tomatoey, capsicum (bell pepper) sauce with a whole heap of sweet paprika and a big dollop of cream to finish it off. It is perfect for the freezer, it’s made with family-friendly flavours and can absolutely be made with chicken thigh or chicken breast if you prefer.

Loaded Scandi Hotdogs

These are now officially one of my favourite things to eat! Spiralised sausages loaded with a potato salad and all the trimmings – although this isn’t just any potato salad, it’s inspired by remoulade, a tangy mayonnaise-based sauce commonly made with curry powder and pickles. It’s an absolute flavour sensation and got a big tick of approval from my family! 😍

The forecast for this particular weekend was rain, and it was a cold one, but I love that it didn’t stop us from heading away. We’ve recently gone from a tent to a @cubcampers Drifter. We set up quickly and enjoyed a warm, comfortable night with our heater on, before waking up to fresh air and a day by the water. Magic. ✨
