Sunday is my time to reset and get ahead for the week! With a little bit of meal prep, I find I can save time, reduce stress, and stay on top of what my family and I are eating. Meal prep not only helps me cut down on those last-minute trips to the grocery store but also lets me plan out meals that are nourishing, delicious, and tailored to what we enjoy.
This week, I’m prepping a few of my go-to recipes that make dinners and lunches easy and versatile. I’ll be roasting two chickens—one to enjoy for dinners and the other to shred for quick, protein-packed lunches. I’m also making a big batch of my classic bolognese sauce to freeze, so we’re ready for a busy night later in the month. For nourishing lunches, minestrone soup is on the menu, and as a quick lunchbox addition or snack, I’m whipping up a batch of corn fritters which you can find both on my website and in my debut cookbook, The Simple Dinner Edit.
