An incredibly easy and tasty light meal, this Tuna Fried Rice is popular with kids. If they don’t like tuna, you can easily swap it out for cooked bacon strips or bits.

Servings: 4 servings

Ingredients

  • 1 tbsp olive oil
  • 135 g (1 cup) frozen vegetables
  • 2 garlic cloves, freshly minced
  • 370 g (2 cups) cooked rice (jasmine, basmati, short-grain or even brown rice)
  • 185 g ( oz) canned tuna
  • 4 eggs, whisked
  • 2 tbsp tamari, or all-purpose soy sauce
  • 1 tbsp sesame oil

Instructions

  • Heat the olive oil in a large, heavy-based frying pan over medium heat.
  • Add the frozen vegetables and cook for 1 minute.
  • Add the garlic and cook for an additional minute, stirring it through the vegetables.
  • Add the rice and tuna and cook for 1 minute, stirring everything to combine.
  • Move everything to one side of the pan. Add the egg to the other side and cook for 2–3 minutes until firm. When cooked, combine it with the rice mixture.
  • Add the tamari and sesame oil, cook for 1 minute, then serve.
