Meal Plan #25

A key factor to consider when meal planning is what activities are taking place during the week. After school sports may require a 15 minute meal like this Easy Butter Chicken or Chow Mein. An afternoon tea on the weekend may require some snacks outside of a regular weekly shop. The more we can avoid multiple trips to the supermarket (where we are more likely to suddenly “need” items outside of our shopping list), the more likely we are to save.

Easy Butter Chicken

Many of the butter chicken recipes I have come across are pretty complex. They require multiple ingredients and long marinating times; some even require ingredients to be blitzed in a food processor. This one is made with the simplest ingredients, and I can have dinner on the table within 15 minutes. The flavour is so intense and delicious. Bite-sized pieces of perfectly cooked chicken in a creamy butter chicken sauce is the perfect recipe for a fast and easy dinner.

Mexican Slow Cooked Beef

There is nothing more satisfying than a recipe you can make ahead to reheat and enjoy when you are wanting to enjoy a relaxed, family weeknight dinner or a relaxing weekend get together. This Mexican Slow Cooked Beef features fork tender, fall-apart beef in a rich tomato sauce filled with fragrant Mexican flavours.  It can be used for just about anything. Burritos, nachos, tacos or as pictured served with rice and all of your favourite toppings.

Roasted Chicken with Gravy

Roasted chicken is a meal that rotates on our meal plan at least once a fortnight. There is something so wholesome and comforting about a roasted dinner. Regardless of the season, it’s so lovely to come home after a long day and enjoy perfectly cooked chicken and a big plate of roasted potatoes. It may look complicated, but this is one of the easiest dinners to make. The oven does all the hard work, and this method takes next to no time to prepare.

Homemade Beef Burger

These juicy burger patties are the answer to your next meal plan. Burgers are something my entire family love. Whether it’s outside during the summer months on the BBQ or as comforting Friday night fakeaway, I know everyone will be happy! The best part is how quick these are to make. It really as simple as mixing a few ingredients together. Once you make your own, you will never go back to store bought pre-made patties. These taste so much better, plus you have the satisfaction of knowing yours are made with simple, wholesome ingredients.

10 Minute Creamy Pesto Chicken Pasta

The lengthiest part of this dish is waiting for the water to boil for your pasta! This dinner is super quick to cook and prepare, making it the ultimate weeknight meal. Enjoy perfectly cooked pasta and juicy chicken breast covered in a creamy pesto sauce and finished with lashings of parmesan.

Chow Mein

This popular takeaway stir-fried noodle recipe is so easy to replicate at home, made with simple ingredients. Marinating the chicken in baking soda keeps the chicken incredibly soft and juicy, just like what you would find at your favourite local restaurant. Finished with a thick soy and garlic-infused sauce, this is one to reserve for when you need a delicious dinner on the table quickly.
