The easiest, most addictive sauce you’ll ever make – perfect for drizzling or dunking!
Gochujang Mayo is creamy, spicy, slightly tangy and ridiculously good. It takes 1 minute to make, four ingredients, one bowl, one spoon and some stirring, and instantly upgrades anything you drizzle it on.
The star ingredient, gochujang, is a Korean fermented chilli paste, which comes in mild, medium and hot strengths. It’s rich, umami-packed and widely available at most major supermarkets, and is an easy jar-based way to bring a little excitement to your everyday meals.

You can make this mayo as subtle or as punchy as you like, depending on how much gochujang you add. So don’t be put off if you have spice-wary eaters in the house as you are in control of the heat. Just start small – you can always add more later!
Try this sauce on my Korean Beef Rice Bowls, slathered on a burger, or as a dunking sauce for sweet potato fries or homemade wedges. Basically, once you try this, you’ll find a way to put it on everything … I do!
What does gochujang taste like?
It’s a mix of savoury, spicy and slightly sweet, with a deep umami flavour. Think of it as the richer, more complex cousin of sriracha.
Where can I buy gochujang?
Most major supermarkets stock it in the Asian foods aisle, or you can find it at Asian grocers or online.
Can I adjust the spice level?
Yes! Add more gochujang for extra heat or start with ½ teaspoon if you want it milder.
How long does gochujang last?
It keeps for months in the fridge – so once you have it, you can use it in all kinds of dishes!
What else can I use this sauce for?
Outside of my Korean Beef Rice Bowls or Sweet Potato Fries, it’s amazing on burgers like my juicy beef burger or southern fried chicken burger, wraps, grain bowls, sushi, or even as a dipping sauce for roasted veggies, chicken tenders or crispy tofu.

- 3 tbsp whole-egg mayonnaise
- 1 tsp gochujang (see note 1)
- ½ tsp sesame oil
- ½ tsp rice vinegar
Instructions
- In a small bowl, whisk together all the ingredients until smooth.
- Taste and adjust – add more gochujang for extra heat or a little more vinegar for tang.
- Serve immediately or store in an airtight container in the fridge for up to 1 week.
